BLT….Vegan Style!

Since my husband has been gone for over a week, I wanted to welcome him home with a fantastic vegan lunch!   A comfort food classic, made vegan!  I love tempeh and use it pretty frequently when cooking.  Tempeh is made from cooked and slightly fermented soybeans and formed into a patty, similar to a very firm veggie burger, high in protein, iron and calcium.  The bacon tempeh is a good bacon substitute, the flavor and aroma are pretty close.

This version is so healthy with so many substitutes:  guacamole instead of mayo, tempeh instead of real bacon and whole grain bread.

You will need:

Smoky Maple Tempeh

Guacamole  (I love the Wholly Guacamole because it is fast and easy and avocados don’t last long in my house)

Whole Grain Bread

Romaine

Tomato

Smoky Maple Tempeh, Wholly Guacamole, Whole Grain Bread, Romaine and Tomato

Saute in a pan until browned and slightly crispy

Layer on the goodness, guacamole, tempeh, tomatoes and romaine and serve with all natural Classic Lays

    Wow! That looks so good! I’ve never tried tempeh. Where did you get the smoky maple bacon version?

      You should try it! I found it at Publix in the produce department where they have the tofu and other vegetarian options! It was so good!

        I will definitely look for it. I showed this to my husband and he was intrigued by it. He’s a bacon-lover. This would be a much healthier way to get the flavor he loves.
