Since my husband has been gone for over a week, I wanted to welcome him home with a fantastic vegan lunch! A comfort food classic, made vegan! I love tempeh and use it pretty frequently when cooking. Tempeh is made from cooked and slightly fermented soybeans and formed into a patty, similar to a very firm veggie burger, high in protein, iron and calcium. The bacon tempeh is a good bacon substitute, the flavor and aroma are pretty close.
This version is so healthy with so many substitutes: guacamole instead of mayo, tempeh instead of real bacon and whole grain bread.
You will need:
Smoky Maple Tempeh
Guacamole (I love the Wholly Guacamole because it is fast and easy and avocados don’t last long in my house)
Whole Grain Bread
