Cinnamon Roll French Toast…..

This recipe by no means is healthy, but it is fun and delicious!  I had frozen some left over cinnamon rolls that I had gotten from Ikea.  Since my husband had  had a long trip I knew there was no way the kids and I could finish them all, so  in the freezer they went.   He had mentioned that his co-pilot had tried making French Toast out of cinnamon rolls and that reminded me of the rolls in our freezer.  We prepared them like you would for any French Toast recipe,  they were yummy paired with a hot and steamy cup of coffee.   Our house is filled with the aroma of vanilla, cinnamon, butter…no complaints here!

Cinnamon Rolls

4 eggs

1/2 cup of cream or milk

Whisk the eggs, milk, vanilla and cinnamon

Slice the rolls in half

Dip the cinnamon roll into the batter

Put in a hot pan with butter until golden brown

Mexican Layered Pizza….Ole!

Another favorite around our house….PIZZA!  I have made every kind of pizza imaginable!  And found ways to turn it vegan or vegetarian.  I thought of this recipe after thinking about how yummy a 7 Layer Dip is.  Then I thought how good it would be on a pizza.  This is one of my many vegetarian pizza creations.

1 prepared pizza crust

1 can of fat free re-fried beans

1 can of diced tomatoes with green chilis, drained

1 can of sliced olives, drained

1 package of soy crumbles

1 cup of cheddar cheese

Lots of toppings:  guacamole, fat free sour cream, cilantro, chopped green onions, salsa or salsa verde

Start by drizzling some olive oil into a pan and add the soy crumbles.  Season with pepper, garlic powder, cumin and a little salt, pan fry as you would ground beef until the crumbles get slightly crisp and are cooked through. To prepare the crust:   spread about half of the re-fried beans on top, then add the tomatoes, olives, soy crumbles and top with cheddar cheese.  Bake in the oven at 425 until the crust is crispy and the cheese has melted.

Then top as desired with guacamole, sour cream, salsa, green onions, cilantro.

Pop Tarts for Everyone!

Home made Pop Tarts, how can you resist?   This recipe I had seen all over the internet and had to try it!  These are super easy and probably a little bit healthier too.  I was at Super Target and they did not have the pie crust I was looking for, so I substitued Puff Pastry, so I guess I made homade Toaster Strudels!   This was equally yummy and flaky.

Home made Pop Tarts:

frozen pie crust or puff pastry

your favorite jam or preserves

cooking spray

powdered sugar



Let pie crust thaw, then cut into rectangles.   Add a scoop of preserves to the middle and top with another rectangle.  Crimp the edges with a fork.  Lay them onto a baking sheet sprayed with cooking spray.  Bake at 425 for 15-20 min. or until golden brown.  Let cool.  To prepare the glaze, mix 1/4 c. powdered sugar and 2 tbs. milk and mix well.  Then drizzle cooled pop tarts with the glaze and shake festive sprinkles on top!  These were a big hit this morning!
