I had some leftover egg roll wrappers from when I made the super easy mozzarella sticks (see the 8/28/20011 post for that one!) So, I made egg rolls. These are also easy and you can fill them with anything. We are vegetarians, so I pan fried some tofu until it was crispy, sauteed some broccoli slaw (and I added onion too) that you can get in a bag pre-shredded and a bottle of Mandarin sauce from Panda Express. Wrapped them up (see the 8/28/2011 post for details on wrapping), sprayed them with Pam and baked them at 450 until crispy. Yummy!
Saute broccoli slaw with onion.
Drain, season and pan fry tofu until crispy and browned. Or easily substitute chicken.
Assemble the egg roll on the diagonal with sliced tofu and veggies.
Drizzle on a little sauce.
Roll up, bake and eat! I used the same Mandarin sauce (with added onion and garlic) to dip them in too!
Creativity in the kitchen at it’s best! I found an amazing mozzarella cheese stick recipe online on the Taste of Home website. So super easy, I had to try it out. These were so delicious that even my “vegan” husband had to try them. These were super yummy and we are dying to try them again but with zucchini sticks, eggplant and mushrooms.

Place wrapper at a diagonal and place stick on corner to begin rolling.
Next begin rolling and tuck corners in as you roll.
When you reach the top rub a little water onto the corner so it can stick to itself.
Ready for frying!
Fry in 1/2 inch of oil, making sure when you first put into the pan you roll them in the oil so they won't stick.
