I had some leftover egg roll wrappers from when I made the super easy mozzarella sticks (see the 8/28/20011 post for that one!) So, I made egg rolls. These are also easy and you can fill them with anything. We are vegetarians, so I pan fried some tofu until it was crispy, sauteed some broccoli slaw (and I added onion too) that you can get in a bag pre-shredded and a bottle of Mandarin sauce from Panda Express. Wrapped them up (see the 8/28/2011 post for details on wrapping), sprayed them with Pam and baked them at 450 until crispy. Yummy!
